Changes in my Kitchen

I know.  Its been forever since I have had a chance to sit down and write.  Baby Gavin takes up every minute of my time.  He naps about 4 times a day, but only for 30-40 minutes at a time.  That’s enough time to go to the bathroom and make a cup of coffee while I very quickly pick up the front room and kitchen.  Then my 30 minutes is up and Gavin is awake wanting to play.  Right now he is on my lap and I am wondering just how much time I actually have before he decides the computer is no longer interesting.

Lots of food related stuff is going on.  Last time I mentioned that Gavin has been really gassy.  He still is, but its gotten a lot better since I have cut a few things out of my diet.  Along with oatmeal I have cut out dairy, beans, eggs and now I am experimenting with soy.  Giving up my favorite foods has been tough, but I like trying new things so its not all bad.  Milk and cheese has been hard though.  I’ve had success with sheep’s milk cheese, which is really good, but expensive so I don’t eat much of it.  Goat cheese also seems ok, but its not my favorite.  For milk I’ve tried soy, coconut and almond milk as a substitute for cow milk.  My favorite has been almond milk.  Coconut milk is creamy and delicious, but is also all saturated fat.  I think it would make awesome ice cream.  Soy is also good, but not as creamy and I think it upsets Gavin’s tummy so we are onto almond milk which is great so far.  Creamy and not too bland.  I haven’t had rice milk since I was a teen.  I don’t remember liking it.  Does anyone drink rice milk?  What do you think of it compared to other milks? 

I am the maid of honor in my sister’s wedding in June and I am NOT happy with how much I weigh.  I don’t want to be forever captured in her wedding pictures looking like this.  I still have 20 lbs of baby weight to lose plus toning all those muscles I haven’t used all year.  It’s not just the number on the scale I don’t like, it’s also how I feel.  I like to feel young and strong (who doesn’t!), but these days I’m tired, my muscles are weak, I’m easily winded and nothing fits.  I went to Target to get a few pairs of new jeans to hold me over until I fit into my old clothes and practically left in tears.  I don’t want to look or feel this way for my sisters summer wedding.  So instead of struggling through it all myself I decided to try Weight Watchers.  I’ve never done any sort of organized diet plan before, but so far I really like Weight Watchers.  The point system is very easy to follow and I have learned SO MUCH about what I eat.  My biggest problems are portion control and binge eating at night.  Weight Watchers has really helped me get a handle on those.  And I lost 2 lbs the first week! My next weigh-in is tomorrow and I can’t wait to see how I did.

Last but not least, my very picky daughter has decided she likes cooking!  She says its like potion making, which in our house is when she mixes up a bunch of my bath stuff to make her own “body wash”.  So far she has mastered a fried egg and cooking pasta (just not the pouring boiling water part).   And please excuse the mess.  Babies don’t give you much time to clean OR edit pictures.

Gavin is not going to let me type more so I am off.  I promise to try to get a new recipe up soon.  I have lots of new stuff I have been trying thanks to Gavin!
